Meet Dayton Jenkins, one of our 2026 Vibe Scholarship recipients.
For Dayton, food has always meant more than something to eat. It’s a way to bring people together.
Through baking, leadership, and service, Dayton has found meaningful ways to create connection within her community, turning everyday moments into opportunities for people to feel welcomed, supported, and included.
When Dayton transferred to a larger high school, she initially struggled to find where she fit in. Instead of stepping back, she chose to get involved. She joined Student Council, National Honor Society, and Link Crew, helping create a more welcoming environment for other students navigating similar experiences. She also became part of her school’s first girls’ flag football team, helping build the program from the ground up.
As Vice President of Student Council, Dayton helped organize initiatives including toy drives and blood drives, experiences that reinforced her belief that leadership is about creating opportunities for others and making sure people feel seen and valued.
That same mindset inspired Dayton’s entrepreneurial journey.
At just 13 years old, she launched her home-based baking initiative, The Dessert Bar, combining her passion for food science with her desire to serve others. Over the years, she has volunteered her baking talents for community events, football team meals, and local celebrations throughout Belleville.
One experience, in particular, stayed with her. While volunteering at Belleville High School’s Orange & Black Community Football Game, Dayton watched a young child excitedly run back to his family holding a dessert she had made. In that moment, she realized her work was about more than baking. It was about creating joy, connection, and experiences people remember.
Dayton’s passion for food science also drives the thoughtful way she serves others. Whether adjusting recipes for senior citizens or preparing desserts that support athletes’ nutritional needs, she intentionally uses food to care for people in ways both meaningful and practical.
This fall, Dayton will attend the University of Maryland to study Food Science and Business. Looking ahead, she hopes to open a community-focused bakery that creates not only high-quality desserts, but also spaces where people can gather, connect, and support causes that strengthen their community.
Through every experience, Dayton continues to show that even the simplest acts, like sharing dessert with someone else, can leave a lasting impact.
